• A well established food manufacturing company is looking for an experienced executive chef.

Executive Job Purpose:
• Preparing meals according to menu specifications; food preparation, end food product packaging for delivery.

Chef/Cook Job Duties:
• Food preparation, portioning, cooking
• is able to follow a recipe
• Employing food safety practices & requirements according to company policy and and ensures all kitchen staff members do the same
• Working efficiently and accurately during busy periods
 

• Kitchen maintenance & cleaning or any other relevant duties pertaining to kitchen work
• knowledge of cup measuremts
• a multistasker
• manages time efficiently

Chef Skills and Qualifications:
• Experience cooking multiple international cuisines, Ability to follow strict recipes, works efficiently, communications well, has organisational skills, has a team mentality and leadership skills, is able to work without supervision, is diligent, hard working and is able to work in a high volume turnover of food preparation.

Requirements:
• Must live in makeni or nearby
• Over 25 years of age
• Experienced Chef

Job Description
• Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
• To assist in the preparation & service of food, prepare mis-en-place for the outlets as required.
 

• Adhere to food preparation guidelines to ensure consistent quality culinary offerings to our guests. Continually look to recommend improvements and additions to the Minor Hotels presentation guidelines.
• To keep all working areas clean and tidy to maintain hygienic surroundings. Apply the rule ‘Clean as you go’ at all times. If you have time to lean, you have time to clean.
• Maintain food safety & protection. All food in working areas should be in compliance with food handling techniques, including dating, proper storage, rotation, etc. Maintain basic food safety and sanitation practices.
• Taking responsibility for looking after all hotel property and facilities.
 

• Participating in departmental training to improve departmental skills and hotel service levels.
• Maintaining and oversee adherence to departmental checklists and cleaning schedules
• Assisting at events, banquets and other functions as required
• Adhering to all personal hygiene and grooming standards, fire safety rules and health & safety rules.
• Perform tasks within a timely manner
• Contribute to Kitchen revenue through effective food cost control and contribute to achieving food cost target percentage.
• Report maintenance, hygiene and hazard issues
• Awareness departmental targets and strive to achieve them as part of the team
• Meet all health and hygiene requirements
• Be environmentally aware and manage waste as per the waste management policy
• Prepares and properly garnishes food orders as they are received in accordance with recipes and proper plate presentation
• Supervises and supports team members in own section to achieve optimum quality
• Follows proper safety, hygiene, and sanitation practices at all times
• Ensures close down of section in accordance with departmental procedures and standards
• Ensure the proper sanitation and cleanliness of surfaces and storage containers.
• Follow and maintain cleanliness and good hygiene practices in the kitchen.

Qualifications
• Certificate in Food Principles and Cooking /Culinary Arts
• Minimum 2 years’ experience in culinary field.

Job Description
1. Maintain a high level of personal service to all guests in the Hotel and public areas
2. Ensure linguistic assistance is provided as per market segmentation
 

3. Work in close conjunction with the Assistant Housekeeper in order to ensure a smooth and efficient service to all guests
4. Liaise closely with the Assistant Housekeeper to ensure that correct and timeous update of all room status, special requests, VIPs etc. are done
5. Liaise closely with the Assistant Housekeeper with regards to the maintenance program and the correct & timeous report on discrepant rooms at all times
6. Liaise closely with the Room Service Department with regards to VIP amenities, mini bar charges and to ensure that set standards are kept at all times
7. Ensure that all lost property from bedrooms and public areas are handed to Security and that the correct procedures are followed

Qualifications
1. Full grade twelve school certificate
2. Certificate in hotel management
