The Role

The Production Controller will be responsible for ensuring that production processes are well managed, and all quality parameters are maintained, meeting all KPIs as set by management from time to time.

Key Responsibilities:

  • Managing and supervising all activities related to the receiving, killing & evisceration process, ensuring efficient and timely processing of chickens while maintaining high-quality standards.
  • Compiling, updating, and circulation of Production Reports/SICs/KPI Boards.
  • Developing and implementing standard operating procedures (SOPs) for the receiving, killing & evisceration process, ensuring compliance with food safety regulations and quality standards.
  • Monitoring and optimizing receiving, killing & evisceration processes to maximize productivity and minimize waste, while maintaining product quality and safety.
  • Championing continual improvement initiatives (lean manufacturing, Kaizen,).
  • Monitoring water pick/Spin chiller temperatures and adjusting where necessary.
  • Facilitating and participating in internal and external audits or inspections, providing the necessary documentation and addressing any identified non-compliance issues. Maintaining the department in compliance with the Food Safety Management System (FSMS).
  • Ensuring that all HACCP, GMP and GHP records are correctly filled and maintained for ease of traceability and FSMS maintenance.
  • Coordinating with the maintenance department to ensure regular equipment inspections, preventive maintenance, and prompt resolution of equipment breakdowns to minimize downtime and disruptions.
  • Conducting regular inspections and audits of receiving, killing & evisceration processes, and equipment to identify and address any potential hygiene or safety issues.
  • Staff training and supervise a team of receiving, killing & evisceration workers, ensuring adequate staffing for the workload and maintaining a safe working environment.
  • Maintaining accurate records and documentation related to evisceration processes, quality checks, inventory, and employee training.
  • Ensuring compliance with all relevant regulations, laws, hygiene protocols, food safety standards requirements and industry standards governing poultry processing and chicken abattoir operations.

Key Requirements

  • Degree in Food Science/Manufacturing/Quality/Research and Development or any related field.
  • 3 years' experience in Production function in a Factory set up.
  • Experience in food processing.
  • Understanding Root Cause Analysis and HACCP.
  • Working knowledge of Food Safety.
  • Trouble shooting, Problem solving, analytical skills, working knowledge of a management System software.
  • Ability to work effectively under pressure and manage multiple priorities in a fast-paced environment.
  • Excellent communication and interpersonal skills to effectively coordinate with all levels of staff and cross-functional teams.
  • Computer literacy.
  • Attention to detail and organization skills.
