JOB DETAILS:

Main Duties and Responsibilities

• Inspect food preparation and serving areas to ensure observance of safe, sanitary food – handling practices;
• Determine how food should be presented and create decorative food displays;
• Determine production schedules and staff requirements necessary to ensure timely delivery of services;
• Estimate amounts and costs of required supplies such as food and ingredients;
• Inspect supplies, equipment and work areas to ensure conformance to established standards;
• Instruct cooks and kitchen assistants in the preparation, cooking, garnishing and presentation of food;
• Consult with the Catering Officer to plan menus, taking into consideration factors such as costs;
• Monitor sanitation practices to ensure that cooks and Kitchen Assistants follow standards and regulations;
• Estimate expected food consumption, then requisition from food store;
• Order or requisition food and other supplies needed to ensure efficient operations;
• Analyze recipes to assign prices to menu items, based on food, labor and overhead costs;
• Prepare and keep records of food portions in the kitchen on a shift basis. Check for quality of raw and cooked food products to ensure that standards are met;
• Co-ordinate planning, budgeting and purchasing for all the food operations within the Motel; and
• Perform other duties as assigned by the supervisor.

Qualifications and Experience

• Full Grade 12 School Certificate;
• Diploma in Food Production or related field; and
• Two (2) years work experience in a busy hospitality establishment.

Experience in Months: 24

Level of Education: bachelor degree
