Donoli's Kitchen is a vibrant restaurant serving a delicious mix of local African and Western dishes. We are looking for an experienced, passionate, and hard-working Cook to join our back-of-house team. Responsibilities:
Food Preparation & Cooking:
- Prepare and cook menu items (both African and Western dishes) to high standards of taste, presentation, and consistency.
- Handle daily prep work, including washing, peeling, chopping, and portioning ingredients (meat, vegetables, sauces).
- Ensure all food is prepared and plated in a timely manner, keeping up with busy rush hours.
Kitchen Hygiene & Food Safety:
- Maintain a spotlessly clean, organized, and sanitary workstation at all times.
- Strictly follow food safety guidelines regarding food storage, temperature control, and handling.
- Assist with washing dishes, cleaning kitchen equipment, and sanitizing prep areas at the end of shifts.
Inventory & Waste Management:
- Monitor stock levels of ingredients and report low stock to management.
- Practice portion control to minimize food waste while maintaining quality.
- Ensure proper rotation of stock (First In, First Out).
Teamwork:
- Communicate clearly and effectively with the waitstaff (front-of-house) to ensure orders are correct and sent out promptly.
- Collaborate with other kitchen staff to keep the kitchen running smoothly and efficiently.
Requirements & Qualifications:
Experience:
- Proven prior experience working as a cook or kitchen assistant in a professional, busy restaurant setting is strictly required.
Location:
- Must reside in Silverest or very close proximity (strongly preferred to ensure punctual arrival for morning prep or late-night closing shifts).
Skills:
- Solid knowledge of both local Zambian/African dishes and Western cuisine.
- Strong knife skills and understanding of basic professional cooking techniques.
- Excellent time management and ability to remain calm and focused under high pressure.
- Strict adherence to personal hygiene and kitchen sanitation standards.

- High energy, a strong work ethic, and a team-first attitude.
